Grilled Quiche

Grilled Quiche

Ingredients:
6 Green Onions
1 Pie Crust
Half Head Cauliflower
Salt
Pepper
1Tbls Butter
4 Eggs
1 Cup Milk
1 Cup Cheddar Cheese
Half Cup of Parmesan Cheese
5 Slices Of Bacon
Sausage (We used hot and spicy breakfast in patties)
1 Avocado (optional)


Directions:
Grill bacon and sausage until done.  Chop onions and cauliflower.  While grilling, saute cauliflower and onions in butter until tender.  Add Parmesan cheese, salt, pepper and remove from heat.  In a separate bowl whisk eggs and milk vigorously for 2-3 minutes.  Place pie crust in a baking stone. Add  sauteed mixture into pie crust. Top with crumbled bacon and cut up sausage.  Pour egg mixture over everything and top with cheddar cheese.  Grill at 400 until the eggs are cooked. Top with avocado chunks.

Ingredients:
1lb ground beef
Beet Veggie pulp
1 packet onion soup mix
Thick bacon
Velveeta
Grated Parmesan

Directions:
Combine beef, veggie pulp, soup mix in a bowl. Make 12 thin patties. Place Velveeta on top of 6 patties and sprinkle with parmesan.   Cover 6 patties with remaining 6 patties forming burger shape.  Wrap with bacon and secure with a toothpick.  Grill at 400+ for 18 minutes or to your liking. Toast hamburger buns on the grill during the last 5 minutes. *Careful, cheese is very hot!

Ingredients:
For meatballs:
1lb ground beef
1/4 cup Veggie pulp (ours was celery, carrots, cucumber)
Salt (to taste)
Pepper (to taste)
Garlic (to taste)
2 Chopped green onions

Sandwich creation:
Hoagie or French bread
Marinara sauce
Provolone Cheese

Directions:
Combine all ingredients in a bowl.  Form small balls.  Grill at 400 for 15-20 min.  During the last 5 minutes, add your hoagie bread to toast.  Place 2 or 3 pieces of cheese on bread, top with meatballs and marinara sauce.  Enjoy!

Smoked whole chicken

Coat chicken with your favorite rubs.  Slice an apple, small onion and an orange and fill the cavity of the chicken with them.  Stick in the refrigerator overnight.  Smoke for 2 hours and set temperature to 300 until it reaches 170.

Followed the directions on the Traeger website here.  I smoked them for 30 minutes before switching to high for 30 minutes though.

Honey-BBQ Chicken

Ingredients:
Boneless/Skinless Chicken Beasts
Honey
Traeger Honey Bourbon Sauce
Traeger Chicken Rub 

Directions:
Tenderize chicken using a Jaccard tenderizer.  Add rub generously on both sides of breast.  Top with a little honey.  Grill on high, honey side up, for approximately 10 minutes.  Flip, top with BBQ sauce and grill for 5 more minutes. Enjoy!

Grilled Corn Bread

Make according to package.  Put in well greased grill safe pan or stone. Grill for about 15-20 min or until toothpick comes out clean.  If using stone, take off a few minutes early as stone will continue to bake.  This corn bread was not as dry as oven baked corn bread.

Ingredients:
Broccoli
Cauliflower
Mushrooms
Baby Carrots
Salt 
Pepper
Garlic
Paprika
Thyme
Smokey Mesquite Seasoning
Olive oil
Butter

Directions:
Cut vegies to size you like.  Zane picked out these four vegies and cut them himself.  Put in grill safe pan.  Sprinkle with olive oil.  Add about a teaspoon of each of the spices.  Mix well.  Add 2 tablespoons of butter (to melt as it cooks). Cover with foil. Grill for approximately 45 minutes depending on the amount of vegies you have.  Enjoy!

Seafood Galore



 Grilled Tilapia, Bacon Wrapped Scallops, Crab Cakes, Sweet peppers and Parsnips

The fish was rinsed, seasoned with lemon pepper seasoning and grilled on a wooden plank.
Recipe for Scallops came from the Traeger site.
Crab cakes were premade and bought on a whim by Greg.
Vegies were sliced, sprayed with a little butter, salt and peppered.

The neighbors came over to check this dinner out!

Grilled Mini Pizza

Use pre-made biscuit dough and flatten into mini pizzas.  Add toppings and grill according to directions on biscuit package.  We added tomatoes, avocado, spinach, olives, red peppers, grilled chicken, mozzarella cheese, and some seasonings.  Zane had a blast making his own and then eating it.  Super fun and super easy!
